vegan fig + plum cake
1:05 PMTook this recipe and vegan-ized it. Turned out perfectly, except that I was too impatient to make the top all pretty. My new favorite cake. VEGAN FIG+PLUM CAKE FRUIT: 1/2 lb plums, pitted and quartered 5 small Black Mission figs, quartered CAKE: 1 1/2 cups flour 1 cup sugar 1 tsp baking soda 1/2 tsp salt 1 c. water 1/3 c. oil 1 Tbsp vanilla 2 Tbsp apple cider vinegar TOPPING: 2/3 c. chopped walnuts 1 Tbsp granulated sugar 1/4 tsp ground cinnamon 1/4 tsp ground cloves INSTRUCTIONS: Preheat oven to 350°. Grease a 9-inch spring form pan and insert a round of parchment paper in the bottom; grease the paper lightly. Mix or sift dry ingredients together in a large bowl. Measure in the water, oil and vanilla, and stir with a fork until no lumps remain. Add the vinegar at the last minute, stir to combine, and pour into the prepared pan. Sprinkle walnuts evenly over batter. Starting at the perimeter of the pan, arrange the plum and fig wedges in a pretty pattern, cramming them close together. Combine the sugar and spices in a small bowl and sprinkle it over the fruit. Bake on center rack for 40 minutes, or until the center of the cake is set. Cool for about 1 hour.
